I like to make something new every time. I’m adventurous. I have disasters sometimes, but I’m not scared.
My best cooking is probably curry. It’s my favourite and I can eat it every day. I no longer have to measure anything, it’s second nature.
I’m pretty good at traditional things like Beef Wellington, roast birds, roast beef, roast lamb, Yorkshire puddings, etc.
I lived in Finistére in Brittany for a year so I’m very good with seafood and fish.
Before I said goodbye to Italy I fell in love with the real Italian food and pasta/polenta are never very far away. It’s the best fast food in the world. It's also some of the BEST food in the world.
At catering college my best marks were for desserts and pastry but I don’t get the chance to do these so much now.
My kids like most everything I make for them which makes me feel very happy.
I love cereals and fruit and chocolate. Putting them all together into a dessert is great.
I’m an omnivore, which is how
homo sapiens was designed…
I’m also a gastronaut, so I love to eat other chefs’ food and I appreciate everything. Our local chef, Peter Jackson at Maes y Neuadd
